Bourbon Barrel Aged Apple Mead (Cyser) from Late Harvest Apples
16% ABV – Dessert
This luscious barrel-aged cyser is made from late harvest apples, the last apples of the season. These apples have dried out slightly and have a higher sugar content per quantity of juice when pressed. After blending with wildflower honey we let this mead ferment and rest in freshly emptied bourbon barrels for a complex buttery oak finish.

Traditional Mead Made form Certified Organic Brazilian Wildlower Honey

This traditional mead is made with just three ingredients: Certified Organic Brazilian Wildlower Honey, water, and yeast. For honey to be considered organic, it must come from very remote areas. The bee hive must be surrounded by a 10 mile radius of complete wilderness, with no farms or human land use allowed. In this case, the honey comes from the Amazon! Layers of delicate floral complexities wash over the palate as you sip this mead.

Je T’aime
Traditional Mead from Tupelo Blossom Honey
15% ABV – Sweet
Michael made this single varietal mead for his wedding to Berniece in 2012. Je T’aime was created from one of the rarest honeys, True Source Certified Tupelo Blossom Honey, which comes from the Mississipi Bayou. The beehives have to be put onto boats so that the bees can reach the tupelo blossoms. With age this mead has only gotten more soft and elegant.
